RAISE THE ROOF - SPECIAL EDITION TEXAS STYLE SAUCE
Message from the Chef: Raise the Roof with Habitat for Humanity and 'Cue Culture!
‘Cue Culture and Habitat for Humanity build homes for deserving families. Every time a bottle of our Raise the Roof Sauce is purchased we’ll donate a portion of our proceeds to this worthy cause – a full 20% of our profits – to make HOPE the foundation of another house built.
"This sauce has a big Texas personality. Marrying juicy tomato with zesty spices and a sweet base, Raise the Roof has enough flavor to complement any barbecue meal without setting off the fire alarms. It is my version of Texas style barbecue sauce, and was developed in conjunction with some of our best customers. It’s also for a very worthy cause.”
Use it as a marinade or finishing sauce on pork, beef, fish, shrimp, veggies, chicken or pizza. Or just take out a spoon and enjoy.

APRICOT
HABANERO RUM BARBECUE SAUCE
Message
from the Chef: "The original 'Cue Culture sauce, 12 years in the making. Apricot
preserves and habanero peppers give this sauce a sweet, sneaky hot flavor. I love spicy food,
but I also like to taste the ingredients of the
dish. In other words, I like "hot" but not at the
expense of flavor. This one is my personal favorite."

CHERRY
BOURBON BARBECUE SAUCE
Message
from the Chef: "This is a deliciously sweet one. Black cherry preserves
provide the
base. Then we stir in maple syrup, bourbon and
mild chili to balance the flavors. It's got a
gorgeous color, great texture - you can see the
cherries - and a wonderful fruity flavor. Some
folks use it as a condiment on burgers, like a
fancy ketchup. Others use it as a unique marinade for steak tips or as a finishing sauce on salmon, chicken or ribs. And some folks have been known
to eat it right out of the bottle with a spoon. This sauce
sells the best here in Maine."

NORTH
CAROLINA VINEGAR BARBECUE SAUCE
Message
from the Chef: "The Carolina
Vinegar Sauce is a traditional Eastern North Carolina
barbecue sauce using cider vinegar, brown sugar,
pureed onions, and pepper as its base. I
learned about barbecue in North Carolina and have
a soft spot for Carolina style pulled pork with
a vinegar based sauce. Carolina natives and purists
have told me the flavor of the sauce is spot on."

SMOKE
IN YOUR SAILS SEAFOOD SEASONING
Message
from the Chef: "Put some
Smoke in Your Sails with this seafood seasoning.
It's an interesting combination of flavors including
lemon pepper, paprika, nutmeg and ginger.
I tried the rub on light fish, dark fish and shellfish
while I was finalizing the formula. I think the
rub works well with all types of fish, and with
chicken or veggies. I even made crab cakes with
it - very successful! It really complements the
food without overpowering. And the nutmeg gets
your nose into the game right away. Very pleasing."

BARBECUE
SEASONING
Message
from the Chef: "The Barbecue
Seasoning is a great all purpose dry rub. It consists
of approximately one third brown sugar, one third
paprika and one third spice mix. The sugar caramelizes
nicely at low temperatures sealing in important
juices, and the spice blend provides a nice, but
not too hot flavor. We use the seasoning on everything
we prepare from pork shoulder to ribs to beef
brisket to chicken to grilled vegetables."
