Black Jade Steak Tips: Pour one bottle of Black Jade Marinade into a resealable plastic bag with 1 and a half lbs of steak tips. Marinate 1 hour. Grill indoors or out using 1/2 cup of reserved ma rinade to brush on steak tips in the skillet or grill. A crockpot works well, too.

CHERRY BOURBON BARBECUE SAUCE
Message from the Chef: "This is a deliciously sweet one. Black cherry preserves provide the base. Then we stir in maple syrup, bourbon and mild chili to balance the flavors. It's got a gorgeous color, great texture - you can see the cherries - and a wonderful fruity flavor. Some folks use it as a condiment on burgers, like a fancy ketchup. Others use it as a unique marinade for steak tips or as a finishing sauce on salmon, chicken or ribs. And some folks have been known to eat it right out of the bottle with a spoon. This sauce sells the best here in Maine."

SMOKE IN YOUR SAILS SEAFOOD SEASONING
Message from the Chef: "Put some Smoke in Your Sails with this seafood seasoning. It's an interesting combination of flavors including lemon pepper, paprika, nutmeg and ginger. I tried the rub on light fish, dark fish and shellfish while I was finalizing the formula. I think the rub works well with all types of fish, and with chicken or veggies. I even made crab cakes with it - very successful! It really complements the food without overpowering. And the nutmeg gets your nose into the game right away. Very pleasing."

BARBECUE SEASONING
Message from the Chef: "The Barbecue Seasoning is a great all purpose dry rub. It consists of approximately one third brown sugar, one third paprika and one third spice mix.
